Instructions
Step 1:
- In a large mixing bowl, combine the whole wheat flour, oat flour, ground flaxseed, baking powder, and salt.
- Mix well to ensure even distribution of ingredients.
Step 2:
- In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until well combined.
Step 3:
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Be careful not to overmix; a few lumps are okay.
- Gently fold in the mixed berries.
Step 4:
- Heat a non-stick skillet or griddle over medium heat.
- Once hot, lightly grease with cooking spray or a small amount of oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until golden brown on both sides.
