Description

Whole Grain Pancakes with Berries offer a delicious and heart-healthy breakfast option. Packed with fiber, antioxidants, and nutrients, these pancakes provide a nutritious start to your day while satisfying your taste buds.

Ingredients

Scale
  • 1 cup whole wheat flour
  • 1/4 cup oat flour
  • 2 tablespoons ground flaxseed
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk (or any milk of your choice)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as strawberries, blueberries, raspberries)

Instructions

Step 1:

  • In a large mixing bowl, combine the whole wheat flour, oat flour, ground flaxseed, baking powder, and salt.
  • Mix well to ensure even distribution of ingredients.

Step 2:

  • In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until well combined.

Step 3:

  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Be careful not to overmix; a few lumps are okay.
  • Gently fold in the mixed berries.

Step 4:

  • Heat a non-stick skillet or griddle over medium heat.
  • Once hot, lightly grease with cooking spray or a small amount of oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until golden brown on both sides.

Notes

  • For extra fiber and texture, you can add chopped nuts or seeds to the batter.
  • To keep pancakes warm while cooking the remaining batches, place them on a baking sheet in a warm oven (about 200°F or 95°C).
  • Customize your pancakes by topping them with additional berries, sliced bananas, a dollop of Greek yogurt, or a drizzle of additional maple syrup.
