  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme

Instructions

Step 1: Prepare the Zucchini Noodles

  • Rinse the zucchinis and cut off both ends.
  • Use a spiralizer or a julienne peeler to transform the zucchinis into noodle-like strands.
  • Set the prepared zucchini noodles aside for later use.

Step 2: Make the Marinara Sauce

  • In a large skillet, warm the olive oil over medium heat.
  • Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent.
  • Then, incorporate the minced garlic and cook for an additional 1-2 minutes until it releases its aroma.

Step 3: Cook the Sauce

  • Mix in the crushed tomatoes and tomato paste, then add the dried oregano, basil, and thyme.
  • Season with salt and pepper to your taste.
  • Bring the mixture to a simmer, cooking it for approximately 15 minutes while stirring occasionally, until the sauce thickens slightly.

Step 4: Combine and Serve

  • While the sauce is simmering, blanch the zucchini noodles in boiling water for 2-3 minutes until they are just tender.
  • Alternatively, sauté the noodles in a separate pan with a little olive oil for 2-3 minutes.
  • Drain the zucchini noodles and add them to the skillet with the marinara sauce.
  • Toss the noodles to coat them evenly with the sauce.
  • Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese, if desired.
