Ingredients
- 4 medium zucchinis
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Grated Parmesan cheese for garnish (optional)
Instructions
Step 1: Prepare the Zucchini Noodles
- Rinse the zucchinis and cut off both ends.
- Use a spiralizer or a julienne peeler to transform the zucchinis into noodle-like strands.
- Set the prepared zucchini noodles aside for later use.
Step 2: Make the Marinara Sauce
- In a large skillet, warm the olive oil over medium heat.
- Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent.
- Then, incorporate the minced garlic and cook for an additional 1-2 minutes until it releases its aroma.
Step 3: Cook the Sauce

- While the sauce is simmering, blanch the zucchini noodles in boiling water for 2-3 minutes until they are just tender.
- Alternatively, sauté the noodles in a separate pan with a little olive oil for 2-3 minutes.
- Drain the zucchini noodles and add them to the skillet with the marinara sauce.
- Toss the noodles to coat them evenly with the sauce.
- Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese, if desired.
